Why do carnivore dieters need to watch dairy carbs?

Lactose is a sugar. Even on an all-animal diet, dairy carbs can add up to 30–50g/day if you're liberal with milk, yogurt, cream cheese, and soft cheeses.

Hard aged cheeses (cheddar, parmesan, gouda) have the least carbs because bacteria consume the lactose during aging. After long aging, there's almost none left.

Butter and ghee are essentially zero-carb — the carbs are in the milk solids, which are removed during churning and clarification.

Heavy cream adds up: 1 tbsp = 0.4g carbs. Three coffees with 3 tbsp each = 3.6g just from cream — before any food.
